The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.
The Job
- Interact with customers, read and listen to them to assess beverage preferences, present bar menu, answer all related inquiries, respond to customers’ requests promptly in a polite and professional manner, take food and drink orders (from serving staff or directly from customers) and place orders accurately into the register system – ensuring extreme attention is paid to details.
- Serve food and beverages in a timely manner, and ensure food is served at the correct temperature hot dishes are hot); work closely with related staff on matters pertaining to wine and cocktail service.
- Plan bar menus, create unique alcoholic and non-alcoholic drinks and develop new cocktail recipes, make recommendations, upsell items and inform them about new beverages and specials.
- Prepare alcoholic and non-alcoholic drinks according to standard menus or mix and garnish cocktails based on standard specs and serve beverages to customers.
- Comply with all food and beverage regulations; check identification of customers to verify they are of legal drinking age in case of doubt.
- Plan, organize and control the operation of the bar area to streamline drink preparation and inventory.
- Lead the work of bartenders and other bar staff.
- Take inventory of liquor, wine, beer, mixers, ice, napkins, straws, glassware and other accessories, and order supplies to ensure bar and tables are well-stocked.
- Maintain a clear work and dining area by removing trash, clean tables and wash glasses, utensils and equipment to ensure sanitary environment at high standards.
- Arrange bottles and glasses to make attractive displays.
- Assist in the preparation of homemade liquors, syrups, etc. as directed by the Beverage Manager.
- Perform other duties as and when assigned by the manager, or designated supervisor.
- Ensure maintenance of humidors and cigars in Private Reserve.
- Perform any other related duties as and when assigned by the supervisor.
About You
At least 3 years’ relevant experience gained in hotels, clubhouses or free-standing restaurants and barsFluent in English. Cantonese and Mandarin proficiency is an advantageFormal training in mixology is an advantageGood knowledge of mixing, garnishing and serving drinksWorking knowledge of food and beverage laws and regulationsAbility to keep the bar organized, stocked and cleanAbility to stand, walk and bend, etc. for extended periods, and lift up to 10kg.Terms of Employment
