Opened in 2008, Four Seasons Hotel Macao has become a coveted destination for both business and leisure travelers who seek exceptional and personalized services. Its numerous awards and satisfied customers attest to its excellence. In October 2020, Four Seasons Hotel Macao introduced The Grand Suites, an all-suite tower that took the concept of luxury and bespoke services to new heights. With the addition of 289 suites, the Hotel's room count increased to a combined total of 649 keys, making it the largest property within the Four Seasons group. About the role
The Executive Pastry Chef is responsible for overseeing all aspects of pastry and bakery production within the hotel, leading a team of pastry and bakery chefs and ensuring the highest standards of quality, creativity, and presentation. This role involves menu development, staff training, and maintaining operational efficiency in the pastry kitchen.
What you will do
Create and design innovative pastry menus that align with the hotel’s culinary vision, seasonal trends, and guest preferences. Collaborate with the Executive Chef to ensure cohesive offerings across all dining venues.
Lead, mentor, and train staff, fostering a positive and productive kitchen environment. Conduct regular performance evaluations and provide constructive feedback.
Ensure all pastry and bakery items meet high standards of taste, texture, and presentation. Implement quality control measures to maintain consistency across all products.
Control labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory control.
Oversee daily pastry operations, ensuring efficient workflow and adherence to health and safety regulations. Streamline processes to enhance productivity.
Work closely with the front-of-house team to ensure effective communication regarding menu items, special events, and guest requests.
Ensure that sanitation standards as set forth by Four Seasons, local, state, and federal regulations are in compliance as well as the cleanliness and organization of the kitchen.
Set up control systems which will assure quality and portion consistency and the ability to create proper purchasing specifications as well as monitor and review operating criteria and develop an awareness of the importance of food preparation and quality.
Communicate with employees and managers to ensure operational needs are met as well as attend regular operational meetings to ensure effective coordination and cooperation between departments.
Comply with Four Seasons’ Category One and Category Two Work Rules and Standards of Conduct as set forth in EmPact.
Work harmoniously and professionally with co-workers and supervisors.
What you bring
Bachelor degree in Culinary Arts or a related field is preferred
Proven experience as an Executive Pastry Chef or in a similar leadership role within a 5-star hotel or luxury establishment
Proficiency in various pastry techniques, including chocolate work, sugar art, and advanced baking methods
Strong creativity and a passion for pastry and dessert innovation
Strong leadership and interpersonal skills, demonstrating the ability to inspire and motivate staff.
Excellent communication skills to facilitate clear and effective dialogue among team members and other departments
