The Department
Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.
The Job
Prepare and produce all oriental dishes according to the prescribed recipes and specifications
- Check and prepare the required mise-en-place according to the menu orders
- Prepare store requisitions for supervisor’s approval and ensure that the received goods meet the predetermined quality and purchasing specifications
- Maintain the supple of oriental food items during buffet and record wastage and advise supervisor for appropriate adjustment in future preparation
- Ensure the proper handling and storage of all semi-finished and finished products so as to keep spoilage to a minimum
- Keep the work stations are cleaned and hygienic and proper safety procedures at all times
- Maintain all operating equipment in good working conditions and advise supervisor to raise repair and maintenance request when necessary
- Train new staff and assign them to appropriate work stations
- Assist in creating new dishes for a la carte menu and buffet and preparing sample tasting for management
- Assist in monthly stock taking activities
- Perform any other related duties as and when assigned by supervisor
About You
At least standard
Six years’ relevant experience in leading hotel or large catering establishment with two years in similar positionTerms of Employment
The level of appointment will be commensurate with qualifications and experience.
