Job description

The Department

Our Catering Department manages one of the largest and most diverse catering operations in Hong Kong. We provide a wide range of catering, sports and recreation facilities for Members and their guests in three Clubhouses. In addition, both Happy Valley and Sha Tin Racecourses have numerous catering facilities used by Members, non-members and corporate organizations for a variety of functions.

The Job

  • Check all parts of the kitchen regularly, including pot and dish washing areas to ensure cleanliness; order supplies and ensure correct storage and stock rotation.
  • Check and control mise en place ensuring that this is well organized for service in the following day, including sauce, stock, fish, etc.
  • Check and control daily mis en place according to the direction of Chef de Cuisine
  • Ensure smooth, prompt and top class service provided to guests.
  • Assist in making food requisitions in a timely manner.
  • Troubleshoot issues that may arise in the kitchen and report any unsettled problems to supervisor.
  • Be responsible for basic on-the-job training, coaching and development of Cooks.
  • Be multi-skilled with thorough knowledge of all food outlets of the Club and their menus.
  • Taste and examine food prepared and make necessary adjustments and replenish food when necessary.
  • Be responsible for minimising food wastage.
  • Anticipate guests’ needs through observation and offer prompt, efficient service either personally or through effective collaboration with other colleagues
  • Follow food safety programmes and ensure all associates have working knowledge of the programmes. Assist the Sous Chef in the performance of his / her duties.
  • Personally ensure compliance with all relevant Workplace Health & Safety and Occupational Safety & Health rules and regulations.
  • Align management style, working practices and conduct with HKJC values and policies.
  • Perform any other related duties as and when assigned by the Sous Chef.

About You

  • A minimum of 5 years’ relevant experience gained in prestigious hotels or restaurants with 2 years in a similar position
  • Good knowledge of the latest market trends and contemporary food presentation
  • Experience in all day dining, large-scale coffee shop and banquet food production
  • Solid hygiene knowledge in HACCP
  • Excellent people management skills
  • Good communication skills in English and Chinese
  • Terms of Employment

    The level of appointment will be commensurate with qualifications and experience.
